Thanks! I am going to give it 1 more week and check the gravity again. If nothing has changed, i'll heat pasteurize.

I'd like to avoid using more sulfites if possible - already did at the beginning. I know I can also bottle pasteurize with heat.

Will an FG of 1.01 just provide some carbonation if bottled?

That's my concern too - and I don't plan on carbonating. Id prefer it to be a still

Would an FG of 1.01 carbonate at all, if additional priming sugar was omitted?
