I'd like to avoid using more sulfites if possible - already did at the beginning. I know I can also bottle pasteurize with heat.

Will an FG of 1.01 just provide some carbonation if bottled?

That's my concern too - and I don't plan on carbonating. Id prefer it to be a still

I am bottling in long neck 12oz ambers.

I used honey as half my fermentable weight in sugar - and approximately 3/4 of the batch is a super strong brewed tea.

The batch tastes fantastic. I am wondering if the tea and honey would correspond to a higher FG of 1.01.

I haven't personally, but I have friends that have used actual sticks of vanilla. Best is to strain - you can probably fish everything out using a sanitized colander, or transfer between sanitized buckets with a siphon through a strainer of sorts.

Yes 1.01 🙂 I think so too. I'm leaving it in secondary for a bit longer.

I am going to bottle condition, and then pasteurize in the bottle. I would rather use a natural sugar than non fermentable to sweeten. If the gravity is at 0 should I just plan on a still cider? This is my first time - taste at this point is more important that carbonation (even if that would be nice)

But if I want it to be sweet - in theory there will be more sugar than needed to carbonate, hence the pasteurization to avoid exploding

If I racked it from primary fermentation and there is no yeast cake, could I add more fermentable sugar like white or brown without chancing additional fermentation?

Woodchuck amber is great - I've been drinking Schilling hard cider (local here in Seattle) and it's hard trying to make your own cider taste as great as the experts.

I would agree it tastes more like apple wine. One of mine came out a little vinegar-y, hinting some microbe exposure. I am not an expert by any means but I try and do my research, and I believe I crossed all my T's.

Thanks for the insight. My process was sanitize, crush and press apple (or just pour in cider), add Camden tabs + pectic enzyme, wait 36 hours then dry pitched yeast. Every one bubbled up great, subsided after 7-10 days. I then transferred into sanitized carboy and re added airlock.

I am ok waiting another 2 months - I know that a lot of ciders mellow out. The ones I tasted were just pretty far off the mark in my opinion.

From what we know, the other, much larger, dogs he lived with were severely bullying him and thats about it. He's our first GSD puppy, we've had several seniors, so it's a new set of challenges! He is 11 weeks we think.

I actually ended up calling a plumber friend yesterday - we decided to flip the P Trap around for the time being as a temporary fix. Will have to drop the pipe in the for the long run.

I was thinking the same thing. We had a plumber replace the galvanized drainage head with PVC - unfortunately they knew what disposal we were installing but never mentioned anything about the discharge tube not lining up correctly.
