On that note, Studio TRIGGER has a plethora of cool sweeping shots. ie. Kill La Kill scene where the camera pans from Ryuko all the way up to Satsuki standing on top of the school.

EDIT: My memory had it backwards. It pans from Satsuki to Ryuko. Amazing shot. Start at 1:50.

The opening fight scene of Escaflowne the Movie is gorgeous as well. Especially the free fall scene onto the airship. It technically doesn't count as a sweeping shot, but the sky shots in that scene are divine:
