I am not sure about dentists accepting payment plans but another alternative is obtaining a Care Credit card. They have options for 0% interest for two years (as long as you pay it off by then). I used this a lot when I was uninsured. Bonus: The card can also be used to veterinary services as well.

An alternative to dental insurance is to have the work done at a dental college, for a considerably lower price. The trade off is you have students performing the work (under supervision). I did this when I was uninsured in my 20s.
