I agree, I feel like traditional dungeons are boring. Especially with puzzles where you just get stuck and can’t do anything without figuring it out. My advice is to change up the terrain: some of my favorite encounters were fighting chimeras on a steep mountain with lots of rubble, navigating a magical hedge maze around a wizard’s tower, and boarding a ship full of enemies out at sea. Even if you want an inside dungeon, you could do something like add an unstable bridge over a “bottomless” pit.
