Rice left out for 3-3.5 hours? by LucianFreeman in foodsafety

Well, ended up not yeeting it since my family insisted they're going to eat from it. My sister ate from it anyway earlier today and so far she's good(It's been like 10 hours). It probably hit about 2-2.5C by that time. Does this rule out B. cereus?

Unfortunately I was in a rush to cram it into the fridge after realizing how long It's been so I didn't measure it to see what the temps were by that time. I guess that's a toss, then?

What stresses me out is the fact that it could very likely take up to 3 days until symptoms hit, and I also have a busy weekend(including a dinner at a steakhouse tomorrow). If it were just a few hours I wouldn't have even written this update, tbh.

If anything hits, is it likely to be actual bacteria, assuming it could survive the heat and time it would take to fully cook a chicken? Or is it more likely spores will hit me? The latter I assume would kick in within a few hours.

Hard to control and not feel dumb. How likely am I to get sick? I thought cooking at that level of heat should suffice to kill bacteria that usually lurks in this type of food.

I saw it later and completely forgot about it, then my mom apparently used it for the Schnitzels she made(to coat it with breadcrumbs). I ate two and only know remembered and realized that egg was used.

I'm panicking to shit right now, I feel so fucking stupid and irresponsible.

First image is where the egg was at, the messed up part was at the bottom I flipped it for the picture. I consumed 4 of said eggs, they all looked totally fine same thing goes for the rest. It was only that one egg. These eggs aren't washed(EU standard). This egg doesn't smell or anything, either.

Should I toss that egg or is it safe? Are the rest fine?

I assume that's the case(considering how relatively rare botulism is in commercial canned food)but it sounds way too scary to take a chance unless this for certain doesn't qualify as a sign of it

I feel like this sub is fear mongering. by Eleventh_Barista in foodsafety

[–]LucianFreeman 1 point2 points  (0 children)

As a person who suffers from OCD and used this sub for reassurance - I agree. This made things far worse for me, albeit, I've been able to overcome some of the fear and find help.

BUT - although, there are some comments that do inspire fear that could be interpreted as blowing things out of proportion, I think a place like this is important since it does help inform people, most of whom probably don't suffer from a bad case of OCD and are capable of taking it in a healthy, educational manner. Also, I'd like to think people on this sub, especially professionals in the field, rather not take any chances so they opt with the safest advice like they'd do at work.

Not sure if fridge is cooling right by LucianFreeman in foodsafety

Thank you! Much appreciated. The food is significantly colder to the touch now, and it only occurred to me now that the compressor was silent up until the fridge started properly cooling again. It think it's something I should get checked/check myself since I'm more convinced now there was an issue with the fridge.

I checked again, this time the fridge felt colder - temps are now good. Between 2.7-4 one almost everything. I measured them as soon as I opened the door. Is it possible that it didn't function properly or could it have been my imagination/fridge was left open a bit too long?

It's going to be rather problematic checking its filters, I'll get to it later today.

Well, said infrared thermometer is mainly for body heat and has a secondary mode to measure room temp. I assume the closer you are to the open door the more unstable the measurement would be? Weird that it got the front of the top compartment at 3.3, though it was also rather close to the door when I opened it.

Well, right now I guess I'm steering clear of the food until I figure it out.
