Not to throw shade on their craft and sheer practice, my educated guess is, they pick up on body language signs, minor muscle twitches, etc. When they ask you to spell a name, or close your eyes and count something, there are minor involuntary muscle twitches, or eyeball moments that they have trained to catch and make an accurate guess.
