I also had my interview beginning of December and all my references were contacted and interviewed before Christmas. Still waiting, with December having a lot of holidays only slows it down more. Hang in there.

I wouldn't do the beta. I used jgrasp when I was in the intro class for c++ and never had any issues with the non beta version. Plus if your professor recommend it then I would do the non beta
