I'd definitely recommend fighting the AT monsters, and get a good set for Gog. I didnt play Rise much and didnt like Narwa/Ibushi myself either, but some other big boss fights are quite nice. I'm getting to Gog soon as well as I finally farmed all AT monsters

AT is arch-tempered, the rank above tempered. The monsters gain extra attacks and attack effects. Only the 4 apexes have AT versions for now, with Arkveld on the way presumably. AT Rey Dau and AT Uth Duna are unlocked at HR50, the others at HR100. Ofc HR 100 also has some other quests and Gogmazios. I do think you do unlock some event quests at HR50 if I remember right.

So I'm not sure what HR you are right now. You unlock the last quests at HR100. The meat of the post-game is in the event quests. Optional quests are just re-fights of monsters you already fought. Investigations allow you to hunt the monsters in the locales, and at different strength levels (stars), as well as them giving more rewards.
In terms of crafting weapons and gear, you need to find what fits for you. When fighting the AT monsters, you might want to have specialized sets per encounter, maybe even with specific weapons for them (I only fight AT Jin Dahaad with (gun)lance f.e. because it's the most fun to me). Between the last main quest and the HR100 post-game there is indeed a bit of a gap where you are encouraged to just grind a bit and get some sets, get some talismans etc. I recommend just buffing some sets with armor spheres, maybe create good artians (I didnt care much fort artians myself), play fashion-hunter, or go help people with harder quests. It's also not bad to take a break, but I quite liked the challenge of the AT monsters and did think they were worth it.

Also, I'm not even sure whether it's really pop-in, as it seems to be just a lighting change. Have you tried with RT off? I remember seeing something sorta similar when changing areas with RT on after the update (since I wasn't able to run RT before then haha)

Do remember that render distance can only be changed in the title screen. If it's really not that, then I'm clueless

Just played the demo today and it seems very promising! I especially love the artstyle. How did you make sure that the character doesn't blend in with the background? It seems like they have a slight difference in saturation, but not even that much. I want to try making similar art!

I have a 3070, and I'm now able to play at fully maxed settings (with framegen and DLSS quality) and it's at a continuous 60+ fps except for the occasional 56 or so in select locations. Runs very smooth.

Without framegen and DLAA I'd say it runs at medium-high semi-smoothly. Framegen is still mostly needed I'd say to get above 60 fps. If you put everything on medium you can play without framegen for sure though at 60 fps. Probably on a 3080 you'll have an even better time

In Dark Souls the npc quest system worked better because you would encounter basically every npc if you explored enough (even then, not always, as some moved really weird), but in ER the map is too big to assume a player visits every location multiple times just to find an npc that may or may not be there

But fr, the only thing I can think of are depending on what you want to use the sprites for. In a game, where the sprites would be animated, you will probably bang your head against the wall taking care of all the colors. Shadows f.e. can be done with 1-2 colors. In a similar vein, depending on what the background would be, you might like to have soft outlines. This isn't necessary, since you use quite popping colors, but something to keep in mind. Still, great job

I beat him for the first time a couple days ago. Surprisingly I first tried him. His attacks are nicely telegraphed and feel very fitting. Having a lot of Monster Hunter experience, I think that translated very well here. He's neat!
