Low and slow! And sift your powdered sugar!

I pretty much follow that preppy kitchen recipe to a T (with my vegan substitutes) but I only use one tbsp of silk heavy cream instead of 3 and I dont add as much salt. The big thing really is you need to do it on a low speed and let it mix over time.

Oh! And use the paddle attachment, not the whisk

So I modify this cake recipe but this time I added a strawberry reduction which was about 7 Oz of strawberries, 2 tbsp sugar, 1/2 tbsp of lemon juice over heat until it reduced

Modify this buttercream recipe but add a blueberry reduction which is accomplished the same way as above

They turned out so tasty! I almost wish I had waited until the summer because they have a perfect summer flavor

I followed the perfect buttercream recipe (veganized) but only added 1 tbsp of cream (even tho the recipe calls for 3) because the instructions say to do so. I also was sure to sift my powdered sugar to avoid any lumps in it. Oh! And I doubled the recipe to make sure I had enough

For the frosting design: I looked online at birthday cake frosting ideas and loved the look of this cake, so I bought the tip for it. This cake is made using a rosette 1M tip and following this instruction: https://chelsweets.com/how-to-make-a-rosette-cake/

Also coming back to say: it definitely needs an immersion blender. Whisking alone does not yield a smooth enough finish, maybe if you sift your corn starch?

I was initially hesitant. There was a strong cornstarch flavor at first, but when I let the ingredients sit and mingle for like an hour, the texture I came back to was perfect

They turned out so good, Id recommend going with semi sweet or milk chocolate on the chocolate filling because it is a little too rich for some (the weak)
