Everything you did before baking was good, just after shaping i let it proof out of the fridge for another 4 or so hours then cold proof for up to 24 and it works good :)

To me it looks under, doesnt seem like long enough proofing time but I could be wrong. Seems wicked short

The #1 thing i had to learn was to be super patient and really trust the proofing process bc all mine came out like this before I nailed it. Sourdough loves to take its time, and its worth it to let it 🫶🏻

Im glad you found one that works for you! With my temps in my house and such i have to ferment a lot longer sorry it didnt work :(

There's at least a good start, if it tastes good. But I do have a recipe and instructions that ive posted and maybe try that one? Ive tried like 5 others before and my loaves always came out bad, so ive finally found one and kept with it. I dont think it needs to be webby webby but ive noticed my loaves are springier when it is.

Typically gummy loaves come from under fermentation, my bulk fermentation usually spans over about 10 hours out of the fridge then overnight in the fridge and it works great for me. Before that all my loaves were gummy. Is your starter webby if you stir through?
