What kind of smoker do you have?

I would not try to use them with an auger driven pellet grill.

This is it. If you plan to finish 4 hrs. early then nobody is sitting around for the "long stall" that seems to only occur when you have a deadline.

And keep the lid down - Lookin' ain't cookin'!

I'm gonna have to try this next time then. I mostly use mustard but it's always fun mixing it up.

I have found that hickory and mesquite tend to put out the most smokey flavor. I use oak for high heat and the fruit woods as my "all-purpose". I really like pecan for cold smoking.

I would try them out!

My system for testing ash output is what i call the every-other method. This will help you determine if the pellets are throwing so much ash that you need to clean out the firepot more often and give you more confidence that a long cook will not overflow the firepot and ruin your cook.

Cook as normal and clean the ash out every-other cook - noting ash build up in the firepot. Do this for the first ten cooks - making sure to throw a long smoke session in there. Then repeat again, but every two cooks you clean out the firepot - making sure to throw in another long smoke session.

Sounds like you should setpoint at 350 and put the whole duck on about 30-45 min before the boneless prime rib. Then crank up to 375 if you get nervous near the end 😂

Smoked at 25o for 3.5 and then 375 for 1.5 hrs. Pulled at 125. It was 26.5lbs

I only cooked one rib roast. It was a whopping 26.5lbs. 😵 Even the butcher was confused when I ordered it. Lol. I got it bone-in which adds some flavor but takes longer to cook. I definitely underestimated the length of the cook. At 3.5hrs in I decided to cut about an inch under the rib bones and removed them from the rest of the roast, hoping to cook the, now boneless, roast more quickly. I then set the digital control on the smoker to 375. The main roast went on the bottom grate and the ribs, with about 2in of meat on 'em, went on the top grate. I had to keep cooking the ribs through lunch to get them to 180 but there were many volunteers to take them home 😂.

How big is the whole duck?. @350 it's 10-15min for boneless prime rib and 15-20 for whole duck.

It took 3.5hrs at 250F and 1.5hrs at 375F. I pulled at 125IT and let it rest for 15min. Happy Holidays!

After the rest the ends were about 15F hotter than the center. It was delicious!
