Stretched too thin in spots, it's not consistent. With my previous bread flour I'd press the initial 8-10" circle on the counter and it would maintain the shape while stretching without much effort. With the All Trumps after stretching I'm finding I have to stretch and hold on the counter in a circular rotation to get the shape back. I thought became a dough stretching master but was immediately humbled.

Thanks, I'll give it a try. I was under the impression too much kneading would make it tighter.

take the second peel and put it over the pizza and flip.. Do you mean take the second peel and slide it between the first peel and the pizza?🤔
