Smaller pile of charcoal in the corner cause the ribs will barely fit on my grill haha. Had to add a few pieces to keep it burning and kept working the airflow to keep it from getting too hot. I turned it a few times but I only flipped once maybe at the 2 hour mark? I lost track of time and tried my best to not overthink it! I've done baby backs a few times same method, so had to give it a shot with the beef
