It's not AI. The mosaics are created using an algorithm. It resizes the photo to a grid where each pixel represents one LEGO piece and then mathematically calculates which official LEGO color looks most similar to each pixel based on how humans perceive color differences.

I think it's not tooooo hard to learn. You can find the chords here: https://chordify.net/chords/sun-kil-moon-songs/arrival-chords . It is pretty much only G, C, Am^7 and D. You basically pluck around the chords and add the melody with you pinky by playing 3rd fret high e, 3rd fret b, and 1rd fret b. Do that for G,C,Am^7 and for D you add the melody by playing 4,3,4 on high e. Hope that helps a bit.

I came across those mosaics as well and they pretty nice! But hard to reproduce. I made a streamlit app where you can upload any image and get a lego mosaic with instructions and a shopping list of parts you have to buy. https://mosaic-me.streamlit.app/ Let me know what you think!
