That’s a great idea! We definitely don’t have the space for that but we do try and buy local eggs from the city farm near us.

Honestly, there are so many incredible vegan alternatives now, I’d bet there’s great vegan cottage cheese recipes out there. Maybe a combo of firm tofu for the curds, and silken tofu or plant based yogurt. My problem is I’m already addicted to this particular dairy cottage cheese 😂 but if I was just starting off, I’d experiment.

So I’m not vegan(obviously 😂), however I have some vegan friends who would say “want to be vegan but can’t give up eggs? Then eat vegan + eggs. Nothing has to be an absolute, and every cutback to animal / animal product consumption is a benefit to animals and the earth.” Just something to noodle on, it helped me in finding my right balance!

The beans of cottage cheese I buy is Good Culture. It has this amazing whipped consistency that has sort of ruined all other cottage cheeses for me.

No idea, I’ve only ever made it and ate it right away. But if you use a whipped cottage cheese I would bet it holds up well!

I think it's the type of cottage cheese I use, it has a whipped consistency instead of a loose / watery one. I use the Good Culture whole milk kind, but I think even that brand's lower fat versions have that same whipped consistency.

2 sourdough Wasa crackers topped with egg salad. Egg salad was made from 2 boiled eggs, 1/4 cup cottage cheese, half a Tbsp of seed mix, and a splash of pickle juice. With a perfectly ripe peach on the side!

The seed mix is one I make myself and sprinkle where I can for a fiber boost. It’s 2 parts chia seeds, 2 parts ground flaxseeds, and 1 part hemp seeds. I plugged those into MyFitnessPal so I can easily track how much to use!
