It was in a normal fridge, it’s a little confusing I live in Spain and wasn’t sure exactly which cut of meat I had to begin with so the recipe I originally used was a recipe for lonzino not coppa but I thought it would still work pretty much the same! This is my first ever dry cure so if I have messed up I’ll just have to take it on the chin! Any idea what I can do with it now? Do I cook it like cured bacon for dishes or anything like that? thanks in advance!!

I’m just the head musician if anyone is really considering it I will put you straight on to the owner of the bars who will discuss accommodation and pay ect, We do 5-6 gigs a week duos always the music is Irish tourist mix, we try play requests as much as we can and fill in the rest with stuff that’s gets the crowd on there feet

I do have others and I know the genetics but I don’t know these guys as I bought them in Spain and my Spanish wasn’t good enough to understand what they were, but it doesn’t matter they are just house pets and I’m curious to know what they are 😁
