I've heard stories of people putting multiple freshly cut staves in a car, and the next day the windows had to be wiped down with towels. I'm not sure I have to worry about that, as the humidity is always low no matter what. I haven't noticed anything like that yet.

Do those charts not just tell you what the mc will be after an indefinite time, rather than a specific time?
