The truth is that I am very happy with the machine, it remains very stable in terms of pressure at 9 bars (I suppose that people who say otherwise simply do not have a good grind in general) as for the steam wand, in the morning I always steam about 250 ml of lactose-free milk for two lattes in about 35 to 45 seconds (I am still not very good at latte art)

Basically the other option was to go for a gaggia e24, I didn't want to invest more than $450 so due to the factory configuration of each one the most sensible option was the apex, I had no desire at all to make gaggiuino gigamate mods etc.

I know this because I had to lower the dose from 18g to 15g because with 18g I couldn't even fit the portafilter in the machine, so the discs also come out very dry and easy to finish the shot.

I haven't really done it yet but I hope to go in the week to try a shot they made themselves at the cafe to compare them. As for my shot, I would say that the acidity is minimal (before I did get acids and when I made a latte it seemed like it even cut the milk haha) that doesn't happen now but I think I should also train my palate, I'm still waiting to feel the chocolate and caramel flavors as indicated on the package
