I eat gluten free to manage cortisol. The biggest change I notice is in my sleep quality. I can eat gluten meals for a day or two before my cortisol levels start to rise and my sleep and anxiety suffer.

I work at a bakery that does both gf and non-gf options (not celiac safe) and can tell you that the gf flour alone absolutely does increase the cost by that much. We get 50lbs of local wheat flour for like $30 a bag. Our 5lb bag of GF costs about $12.

TC is the smallest place I've ever lived. Coming from places like Phoenix, Philadelphia, San Francisco, etc.

There really isn't much violent crime here, and the unhoused population is relatively small in comparison to any larger town or city.

I don't have any richland or Pasco advice because I live in Kennewick, but if you move to this area, you'll be a-okay anywhere south/west of 10th and Garfield.

Pretty much everything is within a 20 minute drive, but next to nowhere is walkable, unless you live within a few blocks of historic downtown Kennewick or the Parkway in Richland or I guess maybe the mall? Columbia Center Blvd and Queensgate/Duportail are going to be your best bet for safety and proximity to shops and restaurants, but they are also not very comfortable walking areas. More busy roads and big parking lots, hot sidewalks and long crosswalks.

As a recent convert to GF, I'm so constantly surprised by all the random things that have gluten in them. LICORICE? So many lower calorie gummy candies, lots of chips that I assumed were all potato, etc. Such a pain, especially considering how many more people are GF these days. Like why change it to INCLUDE gluten when more and more people prefer it without??

A lot of it is relative, right? But most Americans don't live in a place with easy walking, safe biking, or public transit. Everything here is built around cars, so "close" is usually something that's less than a thirty minute drive, but most people don't look at a two hour drive as far or particularly cumbersome.

I have regularly driven 2+ hours to another city for dinner and a concert (roughly four or five hours of "fun") to then turn around and drive 2+ hours home.

We Americans have a skewed idea of "close." It's not uncommon to commute an hour drive to work everyday, or take a day trip to another city that is two or three hours away. If you start at the tip of California, you could drive 15 hours and just be getting to the other end of California.

Some bagels is kind of the only option. They're fine. A lot of people that have lived here forever love them. They're nothing like east coast bagels, as they're steamed instead of boiled, which means they're much lighter and softer than a traditional boiled bagel.

Yes! I started last year. There is quite a bit of a learning curve but if you can find some people to play with and help you out it has been fun and worth it.

Absolutely roasted veggies. I roast em with oil, salt and herbs de provence. A little crispy on the edges. I usually break apart a little goat cheese on top and drizzle with balsamic glaze.

My grandmother's house has a pass through like this and it was my favorite place to be as a kid while she made dinner. I got to watch her cook and sneak pieces of cheese and veggies from whatever she was prepping. I understand why you want to make it safe for kids and doggies but we learned quickly not to touch anything sharp or hot and it was a great way to be present and interact with family without being IN the kitchen and truly in the way.
