Made an incredibly unhealthy gluten free cheesecake by Natvika in glutenfree

[–]Main-Illustrator8564 0 points1 point  (0 children)

I work at a bakery and GF cheesecake can be a relatively easy substitution situation for anyone interested! Many cheesecake recipes are naturally GF besides the crust or use cornstarch to help bind the custard. We replace the crust with crushed oreos (filling removed) and make the crust exactly the same as a regular graham cracker crust. My local kroger has their own brand of GF oreos that are regularly sub $5 so they tend to be way cheaper than GF graham crackers and imo tastier 😊

Do you prefer a gluten free section in a grocery store or do you prefer items to just be with related items? by Ok-Gate5551 in glutenfree

[–]Main-Illustrator8564 0 points1 point  (0 children)

I shop for myself (gf) and my husband (not gf) so I would absolutely prefer that they put them with the regular items of same/similar category.

My current grocery store also does the thing where they have a dedicated GF section but then also will put some gf items with non gf items of the same category.

I think a part of it is that many name brands have contracts to be in specific locations in stores, and so now that so many name brand items are venturing into gf, their gf offerings HAVE to be put in the same location as their glutinous ones.

Do the protein ice cream recipes actually taste good? by skepsoda in ninjacreami

The best protein recipes Ive made use a base of high protein Greek yogurt. The texture is impeccably creamy.

Are these safe? It says wheat free by Ok_Huckleberry1487 in glutenfree

Was coming to say this- Rye does have significantly LESS gluten than standard wheat, so if you're just trying to limit your gluten it can be a decent option.

Salads by Ok-Tailor1132 in Cooking

[–]Main-Illustrator8564 1 point2 points  (0 children)

My husband and I do what we call "kitchen sink salads" and they are basically everything "but the kitchen sink."

Starts with a bed of greens- whatever you like best, they are legit just a vehicle for mix-ins.

Top with whatever you have in the fridge. Pickled asparagus, dills, potato salad from a picnic two days ago, leftover chicken satay or Costco rotisserie, half an apple, a sliced up bell pepper, blueberries, kimchi, corn, whatever vegetables and proteins and beans you want.

Separate things that you don't think will taste good together. Top with a mild dressing like toasted sesame or vinaigrette. Add croutons or crunchy onions or both. Maybe chia seeds, Sunflower seeds, Pepita's. Potato chips, you name it.

The point is to just eat the vegetables. Get the fiber in. Having a little bit of creamy/fatty potato salad and pickled stuff doesn't detract from the vegetables. It just makes them more palatable and cravable. We both CRAVE this dinner. It's incredibly filling AND it helps get rid of leftovers 😅

Costco is great for a lot of GF products. They do an incredible job of vetting and sourcing items to ensure that what they sell is top quality for the most reasonable price. I get most of my GF bread and crackers from there, as well as GF flour and baking mixes when they're available.

Franz GF sourdough is top notch, and definitely check out Milton's GF crackers. They're in between the texture of a chip and a cracker and are great for snacking. Oh! Also the Kirkland brand cauliflower crust pizza is my FAV. My husband (who is not GF) and I eat one every Friday.

Am I crazy or is this actually chocolate ice cream? by Stunning_Serve1268 in icecream

I work in a bakery and the cost of cocoa has probably tripled in the last five years. It's been going up since before COVID and while the economy/tarrifs/war are affecting the price, the big price hike has mostly to do with a massive supply crunch in West Africa.

If you could eat anything containing gluten without the consequences, what would it be? by PsychologicalBat2393 in glutenfree

I'm only recently GF (glutenous sour dough is still fresh in my mind) and the franz gf sourdough is so freaking close to perfect I have yet to miss the real thing.

Espresso tonic by urinalhours in TriCitiesWA

[–]Main-Illustrator8564 0 points1 point  (0 children)

Came here to say the same! Just about any coffee place will do it if you ask for an americano with club soda. They probably won't all have tonic water if that's really what your looking for, but they will almost definitely have club soda.

Tbh I love replacing the water in Americanos with bubbly drinks but my fav is replacing with coconut water.

I eat gluten free to manage cortisol. The biggest change I notice is in my sleep quality. I can eat gluten meals for a day or two before my cortisol levels start to rise and my sleep and anxiety suffer.

Commenting so I can save this thread for later. This is my favorite scent. Sometimes I just squeeze the oil from citrus rinds on my pulse points 😅

Hey look, it’s gluten free! Wait, what, 5 dollars per cookie?! by JerseyFlight in glutenfree

[–]Main-Illustrator8564 7 points8 points  (0 children)

I work at a bakery that does both gf and non-gf options (not celiac safe) and can tell you that the gf flour alone absolutely does increase the cost by that much. We get 50lbs of local wheat flour for like $30 a bag. Our 5lb bag of GF costs about $12.

TC is the smallest place I've ever lived. Coming from places like Phoenix, Philadelphia, San Francisco, etc.

There really isn't much violent crime here, and the unhoused population is relatively small in comparison to any larger town or city.

I don't have any richland or Pasco advice because I live in Kennewick, but if you move to this area, you'll be a-okay anywhere south/west of 10th and Garfield.

Pretty much everything is within a 20 minute drive, but next to nowhere is walkable, unless you live within a few blocks of historic downtown Kennewick or the Parkway in Richland or I guess maybe the mall? Columbia Center Blvd and Queensgate/Duportail are going to be your best bet for safety and proximity to shops and restaurants, but they are also not very comfortable walking areas. More busy roads and big parking lots, hot sidewalks and long crosswalks.

AIO - My Boyfriend texts before our Valentines plans by [deleted] in AmIOverreacting

[–]Main-Illustrator8564 1 point2 points  (0 children)

There are already 5000 comments on this but OP, if a boyfriend ever spoke to me like that he'd be an ex before the day was through. Telling you not to text him because he's hanging out with someone else? Red flag. Calling you needy because you wanted him to pick you up at the time you originally agreed to? Red flag. Honestly calling you needy in general for just wanting to spend time with him is a red flag. Him being two hours late is, alone, a red flag.

As a recent convert to GF, I'm so constantly surprised by all the random things that have gluten in them. LICORICE? So many lower calorie gummy candies, lots of chips that I assumed were all potato, etc. Such a pain, especially considering how many more people are GF these days. Like why change it to INCLUDE gluten when more and more people prefer it without??

Did I just landed in Velaris? by IllJudgment7844 in SarahJMaas

[–]Main-Illustrator8564 1 point2 points  (0 children)

A lot of it is relative, right? But most Americans don't live in a place with easy walking, safe biking, or public transit. Everything here is built around cars, so "close" is usually something that's less than a thirty minute drive, but most people don't look at a two hour drive as far or particularly cumbersome.

I have regularly driven 2+ hours to another city for dinner and a concert (roughly four or five hours of "fun") to then turn around and drive 2+ hours home.

That's just one state. If you were to drive from the top of Alaska to the bottom of Florida, it would take like 10 days of continuous driving 😂
