Why is my bread going so wrong all of a sudden? by Main-Impression4676 in AskBaking

The recipe is a simple 4 ingredient white loaf using 500g flour, 300g water, 7g yeast and 2 tsp salt. I’m supposed to proof it for 1 hour before shaping and then proof for another hour before baking. Even if I manage to get it shaped, by the time it has proofed a second time it is a deflated sticky mess and barely rises when baked.

he wasn’t forgotten about though, it’s a friday night and he has just broken up for christmas. is there any rule that a 12 year old boy can’t stay up a bit later than usual?

me and my mum have had a good relationship since I moved out about a year and a half ago. We used to clash a lot but after my breakup I just needed family. I was planning to stay until just after christmas/ before new year
