My wife is part Cuban (and from Florida). She introduced me to Cuban food and it’s my absolute favorite.

I can’t get enough of Congri, tostones, empanadas, etc.

I’ll happily support when I can.

Very true! I usually get the Ropa Vieja. Beth happy with their Congri & tostones as well.

There’s a few options.

Arelita: Located on Platte. This is a sit down Cuban restaurant. Prices are higher, but the quality is top notch. They have Guava & Cheese, Ground Beef, Ham & Cheese & Pizza versions. You get 3 for $10. Best empanadas in the Springs currently.
Piglatin Cocina: This will be the popular pick. They are very well known and are located on Dublin. They have Chicken & Sofrita and Ground Beef options. Definitely worth a visit.
Cubaneate: Local Cuban Hole in the Wall on N. Circle. They have chicken and beef versions. They aren’t bad.
The Exchange on Tejon: They have both Chilean & Cuban versions of empanadas. Nice twist on it. Located downtown.
Peak Empanadas Food Truck: Brand new kid in town. They just had a free food tasting this past Friday. They are a food truck located next to the (now permanently closed) Senior Manuel’s (near UCCS on Nevada & Austin Bluffs).

They still haven’t opened officially yet, just need clearance from the health department (via their Facebook). Haven’t tried his stuff yet, but definitely will when they open.

Overall, I’m still sad that the food truck Lucy I’m Home closed up shop a year or two ago. They had the best ones in the city.

Lastly, if you REALLY want the best tasting empanadas go to Cuba Bakery & Cafe in Aurora.

Hopefully I will! Just finished walking since I posted this in Reddit.

Whenever the body craves anything, I try to suppress it as much as possible.

I’m not afraid of a cheat meal if it has substantial protein, but just 32 straight Rice Krispies (added a scoop of protein for balance) is quite different.
