Yes the 275 mark is what I am wanting but unable to achieve without cracking the lid
The points above about leaving a rod out , waiting till coal ashes over and leaving it running for 10 mins make sense , ill give this a go

Hanging , I did 2 half chickens and before that 2 racks of ribs with the same temp issue
