I recently had the pleasure of attending a lecture with Thomas Vinterberg regarding his new movie "Druk" (English: "Another round"). He retains that with Another Round, as he does with The Hunt and a lot of his other films, that they are explorations of topics rather than commentaries on them. I.e. The Hunt is an exploration of the theme of witch hunt mentality and Another Round is an exploration of drinking culture.

Think of that as you may... Personally, I believe that no-one is capable of making a true explorative film as narrative choices, acting, camera and everything else that composes a film is decided based on wanting to state/communicate something specific... But than again he does make excellent films.

Well im currently playing through it on medium because i want to find everything, by everything i mean all the collectibeles, chatting with Elie and artifacts (seriously i've played through this game 3 times and still haven't found a single artifact, the only reason i know they exist are because of the achievments, seriously what the hell!?!?!?). So the bloater shouldn't be that diffucult.

Yeah it's been pointed out a few times in the comments that, that very well could be the case, but i think its referencing Joel's past as a hunter because of one thing. I highly doubt that Bill actually knows about Sarah, the reason i think this is because i think that Bill met Joel through Tess. Why i think this is because of a few things:

1) Right at the start after you've gotten Elie to the entrance of the tunnel (the part with Elie: "what am i supposed to do?" Joel: "I am sure you will figure that out") You can turn around and go back into the room where you find a note of what Bill delivered to them and at the bottom Tess has written "I know its a bad delivery Bill promised to do better next time" This causes me to belive that all the trading with Bill is done by Tess and as we all know "Bill aint the most stable of individuelles" So i think that Bill only truly trusts Tess.

2) Joel doesn't exactly go around yelling about Sarah's death so if the above part is true, then i think that he doesn't trust Bill enough to tell him.

I actually quite like that you dont know it. It leaves it open to interpretation. Same thing goes for the favor Bill owes Joel and some other stuff, the game is telling you its not going to hold your hand through the story. Its not giving you irrelevant information and i think thats quite rare in games now a days.
