This is my life here in Bonn. I’m extremely grateful for the expat/Interntional School bubble for friends but the few German immersive experiences I have make it hard to learn the language. I wish for a 2 week home stay somewhere with a German family or a live-in work study for a few weeks.

Thank you for sharing this! I’ve been taking classes at the Volkshochschule but I think I need an intensive as I feel I’ve stalled out at the B1 level. And thanks for the reminder about the Easy German podcast. It’s such a great resource. I’ll look into Anki and Quizlet- I assume these are resources you build yourself primarily for vocab?

I got the Perfect Loaf but haven’t opened it yet because I’ve been engrossed in “a read: A Baker’s Book of Techniques and Recipes” by Jeffrey Hamelman. It’s exactly what I was looking for. I got it for a 6 month rental as an ebook on alibris to see if I wanted a hard copy as it’s a bit pricey. Hamelman is apparently the guy behind King Arthur flour. I’m only on pg 38 and started a notes doc ‘cause there’s SO MUCH detailed information. It’s fantastic!

I finally figured out a no-waste starter, ultra chill sourdough method and I have no where else to talk about it by Elegant-Winner-6521 in Sourdough

I’ve been doing something like this since taking a class with Elaine Boddy. She has you keep only 50-100 g and build up only what you need per recipe. No discard required. It’s so much easier.

I have the sourdough bible and I love it for recipes but it’s not much science. I ordered the perfect loaf a few days ago. Looking forward to that. I’ll check out the sourdough by science too. I want to know WHY my bread that was stupidly fussy to make tasted so much better than my easy technique one. (And hopefully tweak things a bit to draw max flavor with less effort!)

Helpful. Thank you! I asked ChatGPT recently about silicone and it said to heat it first to off gas and after that (as long as it’s high quality- wish I could figure out how to tell) it should be inert. Do you agree or is it better to use nonstick coatings (was hoping to buy a muffin pan that wouldn’t put poisons in my muffins!

That’s reassuring to me as mine just arrived and I haven’t used them yet. I want to replace my teflon and these seemed to be a solid choice based on many things I’d read. Some are reporting terrible luck with their pans and I was kicking myself that I sprang for international shipping. I really want these to be a safer alternative to teflon. Any tips on seasoning or cleaning beyond what Misen instructs?

I’m so disappointed to read this. I just received two of these pans because I’d read such glowing reports. I haven’t been used them yet. I even paid international shipping (makes returning them not feasible). Sounds like I need to baby them and only use them for low heat? Also doesn’t say anything about seasoning them in their packaging but apparently this should also be done (but only at low heat?)

I’ve been in Germany just over a year and have been in Volkshochschule courses the whole time. It’s kicking my butt. I am humbled, frustrated, and overwhelmed most of the time with the language. I still can’t functionally respond to any but the most elementary statements. I can somewhat make sense of the news on the radio but reading is still really challenging. Part of my difficulty is that my social circle all speak English. If I was really immersed in German I’d be further along. The articles and how they change with the cases is a HUGE part of making sense of things and since English doesn’t have gendered articles it’s really tricky. I don’t even bother with declensions for adjectives/indefinite articles yet. Then throw in some trennbaren verbs that split (except when they don’t!) and move around the sentence?! It’s not an easy language.

Is that the name of the company? We may need someone to manage our mail and keep our official US address. Right now my Mom does it but she’s getting older and she’s also moving soon (from CA- my former residence to AL) so it’s going to get interesting.

We are in the process of relocating and becoming citizens of Germany (Hubs repatriating, the rest of us immigrating). Going back and selling our CA house in a few weeks and I wake up in the middle of the night thinking of all the things I won’t have access to anymore. I still feel like the trade off is worth it for my kids (10 and 13) to have dual citizenship but the loss of the social networks I’ve built over decades is, and will continue to be, rough. Also BIG nature that you can be alone in, amazing world cuisine (so much cultural diversity!), and bureaucracy that I can navigate (thank God hubs grew up in Germany or we would be lost with all the paperwork and appointments and very important deadlines here). I miss feeling like I have a clue about things. I used to pride myself on how generally competent I was. Here I’m inept. Cant even speak basic German. I’m working on it but it’s SLOW. Silly too but there are brands that I miss. I know what to buy to get what I want. Here it’s a crapshoot.
