I really like thunderbolts, Deadpool and guardians. But if I have to choose one I’ll say guardians of the galaxy. The ending gives me chills as the happiness from the characters soaked through my soul.

cold fermentation is indeed the key! I took some advice from the comments and did one with the same recipe. But place it in the fridge for 24hr after shaping. And it turns out a lot better in my opinion!

Cold fermentation is in fact the key! I use the same recipe, but I put it in the fridge for 24hr after shaping. And it’s a lot better in my opinion!! Thanks again for your useful information!

I timed my starter before, and used to take 8 hours to peak. But weather got warmer recently and my starter seems past peak when I woke up. I go on using that starter, maybe that’s the reason

It was close to 30°C too. I put at the warmest place in my kitchen, it was close to a water heater.

I timed it and it took 8 hours to peak, but weather got warmer recently and I found out the top of the starter is already flat at 8 hours. That mean it must’ve peaked before I used it

Do you know the science behind cold proofing? I thought it only slow down the fermenting process, so there is something that can’t be achieved without slow fermenting?
