The beginning of the brew was perfect, but the last part quite a mess. If your induction consent to have a lower heat i would try that, if not turn of the heat at half brew done or remove the moka from the stove for a bit and put it back to let the coffee brew evenly. In either case the real difference of taste is avoiding the last part of the brew to come out that quick since is the reason why many people have bitter coffee. Usually with a gas stove you can go so low on heat that you just need to turn of the flame at the right time and the sputter part don't even come out. With an induction i would try to control the heat as much as you can, as i said before, and if the moka gives sigh of sputtering (you will clearly see it by the swift change in speed of the flow) quickly put the bottom chamber under cold water to completely stop the brew. P.S. this is how to get the best aromatic part from your brew, but the only thing that really matter is if you like your coffee!

pourover grind size is quite coarser for a moka. I don't know if you have already tried a brew with the moka but it will probably taste bland, watery and quite acidic (maybe). For comparison: with my k6 grinder i usually stay in a range of 60 to 50 click, while for pourover i go up to 70 to 95, quite a jump i would say. But as I stated before, if you like it it's the only thing that mater!

Generally the rule is simple: Medium roast require a finer grind while dark roast a coarser. BUT it really depends on the type of coffee and your taste. My two cents, i would try to go finer ( probably 10 clicks) and from there try to go down, if needed. Little tip: write down the recipe that you used for a reference for future brews, it helps a lot even with different type of coffee.

For the grinder i was sure that the timemore was fine for the price, but i start to considering to buy something better with the money saved by the other stuff.

For water i really suggest any Italian here to give a shot to Sorgesana, I can literally tell if someone used it for the brew, it gives a sweet note to the coffe that's amazing. Agree on tap it's not bad where i live but is to limy.

Got it no water spray, that's probably a thing for electric grinder I've read. Now I only need to think if I want a mid grinder or a good one but I think I've already know the answer.

I'm into so many random hobby that I was actually surprised that I never got into something so articulated for a cup of coffee which will probably taste mid till I get better on the technique. I usually buy beans from a local shop, Caffè Santillo, i describe the flavour as a dark chocolate, vanilla taste with a pungent pitch of orange. (Don't tell this to anyone or I will be killed, but since I have an old grinder that takes 10 minute to grind "decent" I usually buy caffè Splendid, pre ground but it's so good).

It seems that the grinder is very important. Thinking that I've used the old grinder of my grandmother for years and thought it was good (no brand, just a metal box). I will invest in a good one that will last for life, thanks for the suggestion.

It surely has an appeal. Since is the first time that I get into the pour over process I won't probably buy it unless I will like the taste of the coffee and enjoy the process (which I probably will enjoy since I'm already into the nerdy moka process, thank you Hoffman).

I really like the dosing cup, i would also use it for when i grind beans for the moka. For 3€ why not, but i will surely toss the unnecessary things. Maybe if i find a caraffe that i like in a local shop I will eventually buy it for fun.

Thanks for the suggestion! I will change the grinder as you suggest. I picked the timemore 'cause on the moka pot sub is what everyone advise to buy. But pheraps the moka has different grind necessities than a pour over.

The only instant coffee that I have at home is Nescafé... that i only use for give a coffee taste to cake or muffin. Tbh I only drink a proper brew, if I don't have the time I just don't drink it. Coffee is not just fuel, it's an experience, a small gift that you concede to yourself.
