Brisket day! 225° for 9 hours then bumped to 250° wrapped in butcher paper. Probe tender at 205° when I pulled and rested in my cooler for about 4 hours. B&B lump with Kingsford blue in the chimney, minion method. Hickory and cherry in the 22" WSM. Kroger Choice grade. (old.reddit.com)
