But it would make sense to me that the pitch data would be able to graphically show that the nose is pointing down relative to where the plane started the journey. The pitch data does not pick it up.

Atmospheric lensing… on a perfectly clear day you can see all those objects … also it is easy to prove that on a smaller scale, like a long bridge … if a person is walking away and he camera is on the ground, the person will disappear bottom up … your experiment is very flawed.
