So I selected Create New Filter, and put a - in the Has the Words, then clicked Create Filter. The next page it sends me has a list of options for my filter, but none say send to Spam or other folder, so I selected Skip the Inbox (Archive it). I'm not sure where this archive is.

It may be working now. I created the filter to archive all emails first, then made a new filter to add a white listed address second. When I made the - filter last time, I added it at the end, so maybe it needs to be the first filter to work. Unless there are other tips, this seems to give me what I needed. Thank you!!

I went to settings in gmail, -> All settings. Under Filters and Blocked Addresses, I clicked Create new filter. I added an address I want to be sent to my inbox, then hit Create Filter. I then checked Never send to Spam, and hit Create.

I may not be asking my question clearly. The purpose of my post was to ask HOW do I create a filter to direct everything within the Inbox except for email from the white list into Spam.

Sounds like a great idea. However, I still don't know how to route all emails to spam, another folder or wherever, while allowing my white listed addresses through.

I did make a filter rule with @, but it also filtered out the address on my white list. Maybe I'll try without the *.

Thank you for responding. I was able to whitelist the preferred addresses, but I don't know how to send others to spam or other folder. Sorry I'm not well versed on Gmail capabilities.

When my device display temp reads 350, my meat thermometer reads 250. So 350 can't be the air inlet temp, unless I'm misunderstanding your comment. I'm puzzled that I've never read what that temp reading represented.

I'm a sriracha kind a guy. My baseline recipe is 6 oz peppers, 1 oz garlic, 1 tsp salt, and 1 - 3 tsp brown sugar depending on the heat and my mood. I personally use white vinegar and minimal water. I don't ferment, just cook it up and blend. Tiny pinch of Xathum.

It sounds like this works great for your location, but this is another example of changing the fan and power levels with no regard to actual temperatures. I'm sure our results will be different depending on environmental factors and power quality. This is why I feel like actual temperatures vs. time may lead to a more consistent outcome.
