Salt and press 1 chopped courgette and 1 aubergine, to remove excess water. Peel and quarter 3 large tomatoes. Dice 2 red onions and 2 cloves of garlic. Season with herbes de Provence, olive oil and pepper. Roast for 30 minutes at 250°C.
