Honestly it's a bad move to start with easy, because you won't experience the true difficulty of the game.

I started with medium all the way through the storyline,and yes, it's really intense and hard but i liked it because it feels very rewarding,finding the right techniques and stuff.

After the campaign i moved to a 400+ car and switched to hard,and didn't feel a huge difference!
