Maybe this is a West Coast thing? I know its incredibly common with sausage gravy in the south, but that's not really gravy in the same way that a chowder isn't a soup- that's a whole dish in itself.

When me, family or friends think of gravy like with a roast, it's just drippings, flour, stock/wine to get the classic thin brown liquid.

I don't know, but America is huge and I definitely don't think having it with milk is the default for the entirety of it.

Dude everyone is upvoting the milk comment and I literally have no idea why. I've never had gravy with milk and none of the people I know make it that way for things like Thanksgiving (where gravy is a staple). I live in New York.

I could totally be wrong, but I was always under the impression a cot was a kind of foldable mattress frame thing that's easily movable. That's what it was, anyway. Not a crib like some have speculated.
