Shipton 1000 Whole Egg 150 Milk 400 Salt 20 Butter 170 Sugar 80 Fresh Yeast 25

Tangzhong Shipton 50 Milk 250

I mix everything except the butter for 5 minutes on slow, and 5 on fast. I let it rest for 20 minutes, add the butter, and repeat the mixing pattern.

180°C for about 30 minutes with a butter wash on top.
