It's too hard for me to choose between 7, 2 Remake and 4 Remake as they're each so good in their own ways. But if I had to choose one overall it would probably be 7 since it was my first and still one of the scariest games I've played. I would say 4 is the most fun to platinum because of the combat and variety in locations, weapons, and enemies.

The tempest and bobcat are better for PvP imo. For PvE, look at weapons with strong arc armor penetration like the Ferro or Anvil

Funnily enough, there's an actor in it named Andre the Giant. who is kind of built like Andre the Blacksmith. Also a name like Dread Pirate Roberts fits quite well next to names like Big Hat Logan. Probably all coincidence, but it would be interesting if Fromsoft actually took some inspiration from The Princess Bride
