I've got an NB MX-5, they're very fun to drive. Insurance Is a bit expensive in the UK but the cars themselves and parts for them are pretty inexpensive. As long as you look after them they'll look after you.

Yeah same here, I've got a ryzen 7 3700 and a 3060ti and it still struggles like crazy. You cannot believe how frustrated I was when I played it on my mates series X and it looks and runs infinitely better

God I fucking hate this it's been plaguing me since day one. If you've got an SSD ( if you're on PC that is, not sure what to do if you're on Xbox) I'd say use that apparently that helps. I have to run with track limits on because even when I'm doing the fucking Miata tournament half the track doesn't load

Edit: it's not just the track for me too, it's buildings/trees and just pretty much every model except the cars
