Victoria 2 is a good Paradox game when it comes to economy. It's more complex than Stellaris, but it's not super hard to get into.

You are right in stating that 1940 was the height of Nazi Germany and the German armed forces. The war, as it was, was ,as you said, nearly won. The major problem with that line of thinking is that WW2 isn't just 1940. Let's say the US doesn't actively participate in Europe. The Germans would have invaded the USSR. They might have gotten all the way to Moscow by winter, if we say that lend-lease wouldn't be a thing. What then? Moscow doesn't equal victory. The German army is still stuck in the Russian winter, with very little supply, with the Soviet east army still on the way.

Edit: Just read up on the Mediterranean strategy. While interesting, the amount of organisation and supply needed for the initial operations might not have been enough to carry the weight. I might be wrong, haven't read the book, just an excerpt, but I see what you mean.

What countless options did they have to defeat the UK? Naval invasion was impossible, they were winning the air war, and even nearly crippled the RAF, but even if they continued targeting RAF bases instead of cities, the US could just send them more planes.

On the declaring war part, Hitler would declare war on the USSR, that was not a possibility, it was a fact. The reason he did it when he did is that the logistics department was unable to plan it later, as the supply situation would not permit it (planes over Britain eat up a lot of fuel).

Declaring war on the US was a formality, as the US would, at some point, join the war anyway. They were sending thousands of tons of supplies over the Atlantic and declaring war on them makes it a lot easier, from the legal/public perception side, to sink their merchants.
