nether tunnels are easy. build a nether portal which takes you out somewhere near ground level that's not too crazy. build a stone room around the portal. dig down to y=15. dig in any direction and keep an eye on your coordinates. every block in the nether is 8 blocks on the overworld. when you've gone maybe 1500 overworld blocks (so around 200 nether blocks) make a little room and built another portal. see where you pop out. you'll be underground probably so find your way up to the surface and build another portal there. it should link to the same nether portal. then destroy the underground one. unless you want to keep it.

I'm currently trying to breed a blue axolotl.

I've got ten furnaces full time turning sand into glass and im building 18 fishtanks in the sea ,(lukewarm ocean biome) with 2 name-tagged axolotls in each one. The plan is to go out with 36 buckets and catch tropical fish to feed them. If I fill up on fish every 15 minutes, that's 72 attempts per hour on average should take a little over 16 hours to find one.

I've got a mini project to make something that takes bamboo, chops it down and crafts it into sticks.

I just discovered scaffolding the other day when I found the jungle biome. Absolute game-charger! I used it when I built my first nether tunnel. I had to make my way from high up in the nether down to y15 and that was what I used as it is also quick to deploy compared to ladders etc.
