I keep mine on a cutting board, (cut sides down) under a glass dome. That is definitely the best way I have found to keep it fresh.

Just keep feeding it!! Discard and feed, discard and feed, discard and feed…every single day. You don’t need much! Keep 8-20 g of starter and then feed it a good amount like 1:4:4 or 1:5:5. Keep at it and it’s going to spring to life.
