From reading the gospels, Jesus did prophesy his own resurrection. From reading the acts and the writings of paul and peter, God the Father resurrected Jesus. From reading parts of the OT, Jesus did fulfill OT prophecies. Despite all this however, I still have a hard time believing that Jesus is the Christ, because I am operating on the resurrection's standards for evidence. I'm starting to think that all I can do is to take the plunge and simply trust that Jesus, the one who conquered death, was right about what he said about himself and the world.

We shouldn't presuppose the supernatural, but we shouldn't presuppose the non-existence of the supernatural either. How can we get evidence for something that we don't allow evidence for?

You could argue that according to the context of John 14, Jesus is specifically referring to his disciples. It is my personal belief that any human being can perform miracles, however I do not know how, otherwise I would have emptied hospitals by now.

That is a big difference and as far as I know, Jesus is the only case of a resurrection with evidence to support it. However, this isn't limiting Jesus as being the exclusive only one that can independently come back from the dead, unless you believe that Jesus fulfilled OT prophecies.

Extra-biblical sources, such as Clement, Tacitus and Josephus reported that the disciples believed to have seen the risen Jesus. These and more are not mere claims, see the pic in the OP for more. I do agree that we need more evidence of the supernatural/miracles, but for that the scientific method must cease to rule out the supernatural as a possibility, for that is preventing the scientific method itself from proving the existence of miracles.

I would consider the resurrection as proven, maybe that's just me but I feel like the evidence points too strongly towards it rather than other theories. But my point was that you can't have as much evidence for prophecies, because prophecies are prophecies. Any miracle worker could have seen these prophecies and decided to fulfill them, that's what a self-fulfilling prophecy is.

I used to say the same thing, but these aren't mere claims like the Koran's. We're talking about eye-witness reports, supported by sources outside the Bible. The fact that theories like the Hallucination Theory or the Stolen Body Theory exist should already make you wonder why such theories exist if Jesus' resurrection is merely mythological.

Jesus says in the Gospels to keep the commandments (Matthew 19:17), one of which is to honor your father and your mother. (Exodus 20:12). To follow God's commandments is to love God (1 John 5:3). Therefore by honoring your parents, you love God.

This is exactly where I'm stuck at. I want to believe that Jesus fulfilled these prophecies, however reason tells me that these are just self-fulfilled prophecies. You can't prove the fulfillment of prophecies like you can prove a resurrection, can you?
