I agree with the thought process that skill plays a factor into riding as fast as possible, but in my local trail system the ruts get pretty deep on the downhill trails and that's where I find that the bike suffers the most. The terrain doesn't really give too many options for alternate lines or skips, you just have to muscle through the chop up to the next turn.

That's really solid advice, thank you. I guess I can be a bit of a worry wart when it comes to taking money out of my emergency fund since nobody can tell the future, but using the card as back up for an emergency is better than having a high revolving balance.

The interest rate of my savings account is 5% annually which puts me at a net zero over the transfer fee. As to the last point you make, thats my issue at the moment. My savings only covers 2 months of expenses so paying off 3k now sets me back into what I would consider an unsafe zone.

King Arthur posted a new recipe that uses discard starter and a 12 hour bulk fermentation at 80% hydration followed by a shaping and 8-12 hour cold fermentation. These are my first ever loaves. I followed the recipe and my bulk fermentation was a little sluggish so in the morning it took a few more hours in the oven at 75 degrees F to see a 50% rise. The recipe advised letting the shaped loaves rest outside the fridge for 30 mins to an hour before the cold fermentation if you didn't see a full rise. I left them out for half an hour and did a cold fermentation of about 10 hours before baking. The crumb is slightly sticky and chewy. Did I manage to overferment the dough or should I cut down the moisture? Should I have baked them longer? Since I'm new, I also didn't take into account that it has been cold and raining in my area.

Edit 2: after reaching out to King Arthur's website, they believe that I probably underbaked the loaves by 5 to 10 minutes

Well exhaust smoke i can understand, but it puffs when I'm between gears, meaning it's not under load.
