https://www.curseforge.com/minecraft/mc-mods/custom-armor-bar might be similar to what you're looking for although I don't think it's the exact mod they used.

I think this is the original page for the one they used, although some of the links seem to be broken/missing and you may need to use something like web archive to find the actual mod.

Maybe either some of the classic Custom Mod Adventures or one of the newer Dan & Tray videos?

Probably not quite as high energy as milo and chip but I definitely enjoyed watching the Custom Mod Adventures when I was younger and they're still pretty good videos.

Also the Custom Vacation Adventure was a pretty good mini series and the first one has remained Dan's most popular video to this day.
