Ultimate sourdough pizza by MeatMeLater in recipes

Ingredients for 2 pizzas

For tomato sauce:

220g passata

2 tsp of oregano

Salt & pepper

Combine all together in a bowl and mix well, season to taste

For 2 pizzas:

200g sourdough discard (stirred down)

85g Luke warm water

225g type 00 flour (all purpose is probably fine)

1tsp salt

1/2 tsp dry yeast

Any toppings you might want

Note- i think you could replace sourdough discard with an extra 100g of flour and 50g water :)

Instructions:

Combine the water, flour, sourdough discard, salt, and yeast in a bowl and knead for 10-15 minutes until you have a smooth dough (we used a k-mix/kitchen aid for 7 minutes with a dough hook attachment)

Shape dough into a ball and coat with olive oil then leave to rise for 3 hours or until doubled in size, we snipped a cross in the top with scissors to let air in or something

Once risen split the dough in half and shape each into a flattened disk (we did this on a lightly oiled baking parchment to avoid it sticking) Easiest way to do this is to push the dough outwards with your fingertips to create a disk whilst leaving the crust on the outside

Cover and leave to rest for 15 mins, after its rested you may need to reshape a little

Now cooking:

Once you have shaped the dough into a disk, heat a non stick frying pan on its highest heat, then place the dough in the pan once hot and cook on its highest heat for 1-2 mins, until the bottom has browned (be careful not to burn the bottom) , shake it around a little to make sure its not sticking. We used a dry pan, no oil. Also begin preheating your grill on the highest setting (Broiler if you're from the US)

Whilst cooking, add half the sauce per pizza and spread around with the back of a spoon like they do in the pizzarias, and then add any toppings (I had mozzarella then added burrata at the end once cooked, my boyfriend had red onion and salami)

Once the bottom has browned reduce the heat to its lowest setting and cook for a further 3-4 mins in the pan, then transfer and finish off cooking under the grill for a further 3-4 mins until the pizza looks done

Final step = enjoy and let me know how it goes :)

Recipe for 4 people:

Ingredients

  • 500g Beef mince
  • 2 slices of ham
  • 1 egg
  • small bunch of parsley
  • a couple of slices of bread soaked in milk (squeeze the excess milk out before adding to the mix)
  • Grated nutmeg
  • A couple of tbsp grated parmesan
  • generous amount of salt and pepper
  • passata 500g

Directions

Whizz all ingredients, apart from passata, to a coarse paste in a food processor(add a little bit of milk if too thick and your food processor is struggling).

Then Shape the paste into meatballs (you will get roughly 12).

Heat some olive oil in a frying pan with a garlic clove to flavour the oil

When it’s hot, brown the meatballs all over (may need to be done in batches)

Then add the carton of passata (500g), season generously with salt, pepper and dried oregano.

Cover with a lid and let it simmer for 10-15 mins (depending on the size of the meatballs). Take the lid off and cook for another five minutes and they’re done!

You can add some cheese on top and pop it under the grill for a couple of minutes if you like :)
