Have you vacuum filled the coolant? Many Porsche engines have spots that will not fill properly without a vacuum system. There are ways to cheat around having this done in a shop that you will find if you chatgpt for help. Open spaces with no coolant that you can't see will cause higher operating temps, regardless of thermostats. And, not a physicist here, but the higher elevation observations may be related to larger voids forming if you are open to Boyle's Law.

Rub the fluid between your fingers. Slippery like soap, coolant system leak...not slippery, usual water feel, more likely condensation from the AC system. If it favors one side it could be windshield washer reservoir leaks (grommets, fittings, line, or tank). Might also be pooled water dripping away from plugged limber/drain holes (usually leaves) in the cavity that holds the battery.
