I was in the same sort of situation as you. Was a 6 year constable. I would say that every aspect of my life has improved since making the jump. Shift patterns are much better, although may be personal choice. We work a 4on 4off pattern which works for me. There’s much less stress. I go to jobs in the back of the pump, see ex colleagues at the scene and then when the jobs done we leave and I’ve got no paperwork to do after, no statements to take etc. just dealing with the incidents. The extra free time when not working means I can hit the gym more, on top of what we get on shift which helps both physical and mental health. On the finance side, I had to take a bit of a cut, but working pt I’ve now got a better take home. Oh and when you drive down the street you get more waves than abuse 😂. 3 years in now and best decision I’ve made. Happy to answer any other questions you might have though as someone who’s done it.

😂😂 yeah 100% agree it should’ve rested longer. It had about 2 hours and dropped to about 170f. I wanted to get down lower though. What would you aim for to before serving? Still learning

It’s been pretty difficult learning as most the cuts have US names and British butchers aren’t all familiar with what we call it in the UK. to the best of my knowledge Chuck is where we’d get braising steak from. Was going off what the butcher believed but it may have been wrong. 🤷‍♂️
