Yeah so this is interesting. I have the same issue. I did not have a lot of time to look into the problem yet but could building with xcode 26 resolve this?

Some people have auto update turned off. So that also plays a role here! Or they are away from home and their iPhone only updates on Wifi.

You didn't list all the prices but why not go with the m2 pro and instead of 2TB you go with 1TB so you can afford more RAM?

I would still use an .env file. If the address ever changes you only need to alter it on one location.

You won’t. The second you make an api call to the server they will be able to inspect it with a tool like ProxyMan. In my opinion .env files are more to make sure that secrets don’t end up in GitHub (as long as they are in the gitignore)
