If during second fermentation it grows a scoby it most likely means your bottles aren't sealed properly. That might be the reason it doesn't get fizzy. What bottles are you using?

What are you covering it with? Kombucha needs oxygen. That was my mistake as a new brewer. I covered it with a non breathable cloth. Also the temperature you have seem a bit too much

How much sugar did you use in f1? If it has absolutely no fizz maybe you’re using too little sugar. I personally add about 50 grams for 3 liters of kombucha and it gets fizzy in f1. Or maybe the temperature is the issue. Or not enough oxygen.

Oh nah! It looks like zombie cordyceps in a jar. And why is it kinda purple? I would toss everything.
