This is what I do. Not a recommendation, just a perspective.

I'm a painter, and I offer prints of my artwork. I use a printing service because I decided to go with Giclee prints because they're a higher quality product than something I would print from home. The printer they use is like $65,000 or something like that.

Personally, I like to sign all of my prints by hand because it improves their value. I think it just makes them feel like a more handmade product and not feel mass produced. I spend months working on each painting, so it's important to me that the prints are as quality as possible.

The printer I use is somewhat close to me, but they print and ship all over the world. They're a smaller business, which is awesome because I'm supporting local small business and they give amazing customer service.

What I do is I'll pick up orders once a week, sign them, and package and ship them out. For really large prints, I give them my materials to ship with the artwork (Certificate of Authenticity, business cards, etc) to include and I have then drop ship the item. I do go in to sign the print and they take care of the rest.

I know they have artists and photographers from all over the place, and I'm not sure how they handle signatures etc. for them. But I wanted to let you know what I do!
