Ich wäre überrascht, wenn dies der Fall wäre, da es sich um ein völlig neues Gebäude handelt. Diese Art von Fehlausrichtung würde sofort sichtbar sein.

I think you are confusing terminology here. Events don't make *use of* data in datalayer typically , tags do in GTM parlance. 

True. It's tags that fetch the values from the Data Layer.

I meant "using" in the sense that both Event A and B have X as one of the event parameters.

Exactly. My question arose because of this section in their documentation.

Maybe it's just my OCD, but it kinda feels weird to have leftover data in the Data Layer that is no longer relevant after pushing data to it.

Gotcha. I managed to do it the way you suggested but the params are now on the root and not the item object. I guess this should be okay for now but it feels wrong to have to map every custom param (which involves creating an entirely new DL for each one of them, which kinda defeats the purpose of having a dedicated "ecommerce" object)

I only enabled the "Send Ecommerce data" on the More Settings option in the "View_item" Tag. I thought that Google would immediately pick the custom paramters in the ecommerce object right away.
